Inside Menton’s server training for Boston Grubstreet

It’s what separates the men from the boys, the ghost chili burn from the Habanero weak sauce. It’s why you pony up the cash in the first place. It’s service, that finicky, OCD element of the dining experience that cannot be quantified in timely water glass refillings or spotless silverware.

I had the voyeuristic pleasure of writing about highly-anticipated Menton’s server training for Boston Grubstreet. Menton is the latest venture in Barbara Lynch‘s Boston dining empire – she’s already responsible for No. 9 Park, The Butcher Shop, and Sportello, not to mention a really sexy cookbook.

And yes, they really do get to taste all the wines as part of training.
