I think WD-50 is worth a look and a pretty inexpensive way to give molecular cooking a try. Momofuku Ko got my actual vote, though, as it's the most playful and fun while still being absolutely delicious and inventive -- if you can get in. Jean Georges is absolutely amazing in a stuffier sort of way, a great place to get dressed up like an adult. I haven't been to Daniel yet, but I imagine it to be in the same costly, formal New French vein as J-G, perhaps a bit stiffer and pricier.
